Having a default value for a custom field would allow for currently blank fields to at least have a value in them, especially if the value is mostly consistent across the organization. It saves time from having to always manually update a field.

We are trying to capture the details of contacts in our interaction custom fields and it is character limited, but the Note field allows us to leave any number of characters. We want the custom fields with text to fill unlimited characters.
