Set up some custom fields to only be available for Organization type constituents so that you don't have to see those empty fields on an individual constituent's profile.
Track lifetime memberships that never lapse using the membership management feature. This would let you can see whether someone is a lifetime member in the same places you'd see paying memberships.

When entering a new donation, have an "Add New" option for the dropdowns like Campaign and Appeal. This helps streamline entry of gifts when for a new appeal or campaign.
Having a default value for a custom field would allow for currently blank fields to at least have a value in them, especially if the value is mostly consistent across the organization. It saves time from having to always manually update a field.
