We are having to go into the system daily to unschedule volunteers on our opportunity with a limit of "one shift at a time" in order to allow volunteers to sign up for another one. It is very time consuming. Once the automatic check out has passed, the system should automatically remove the restriction from volunteers.

This is possible, if you go to the signup workflow > Shifts > Advanced settings, you can set a limit for how many shifts a volunteer can signup to.
